I decided to do the healthy vine challenge (4 stars) where I made a 6 second video to show what I was cooking. So, this is something that my grandpa makes a lot, it’s actually really healthy, and the entire portion you see in the video is only about 550 calories. It’s a potato salad, so I boiled 2 medium potatoes, cut them up and mixed them with some finely chopped red onions, one tablespoon of olive oil, 3 table spoons of red wine vinegar and salt and pepper. With that I oven baked two of Gordon’s crunchy breaded fish fillets and called it a day. Yummy, healthy and quick!
